Roasted Zucchini with Parmesan Cheese Recipe!

Delight your palate with this delicious roasted zucchini with parmesan cheese recipe! 
For this dish, you will need:
  • 2 medium zucchini sliced into 1/2 inch thick rounds
  • 1/2 cup of grated parmesan cheese
  • 1 teaspoon garlic powder, 2 tablespoons of olive oil
  • 7/8 teaspoon sea salt, and 1/2 teaspoon pepper.
Preheat your oven to 450°F and then toss the zucchini with the olive oil, salt, pepper, and garlic powder in a large bowl. Arrange the zucchini on a baking sheet, sprinkle with the parmesan cheese and bake for 5 minutes on the middle rack. Then, turn the oven to the broiler for 2–3 minutes or until the cheese is golden brown. Serve alongside our instant pot beef ragu or use as a low-carb base for a variety of delicious summer meals!
