Strawberry Oatmeal Bars
- Preheat your oven to 375 degrees F and place a rack in the center.
- Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
- In a medium bowl, mix oats, flour, brown sugar, ginger, and salt.
- Pour melted butter into the bowl and stir until the mixture forms clumps and the dry ingredients are evenly moistened.
- Set aside 1/2 cup of the crumble mixture and press the rest into an even layer in the prepared pan.
- Scatter half of the strawberries over the crust.
- Sprinkle cornstarch evenly over the strawberries, followed by lemon juice and 1/2 tablespoon of granulated sugar.
- Add the remaining berries and sprinkle with the remaining 1/2 tablespoon of sugar.
- Sprinkle the reserved crumbs evenly over the top, allowing some fruit to show through.
- Bake for 35 to 40 minutes until the fruit is bubbly and the crumb topping is golden.
- Cool the bars completely on a wire rack or speed up the process by placing them in the refrigerator.
- Prepare the glaze by whisking powdered sugar, vanilla, and milk in a medium bowl until smooth. Adjust the consistency with more milk if desired.
- Use the parchment-paper handles to lift the bars from the pan.
- Drizzle the bars with the glaze, slice, and serve.
